Chia Pudding

Chia seeds are trendy and super-expensive. They are a superfood because they are rich in antioxidants, Omega 3s and protein. They do make a good alternative to processed grains if you are looking to reduce those in your diet, which you might want to do for many reasons. So, particularly for vegetarians, they are worth the occasional expense.

I eventually gave in to the trend and tried them out of desperation on my Paleo week. For me, they make a good alternative to oats at breakfast time. I occasionally add them to smoothies, flapjacks and breads, but at £1.99 per 100g even from my supplier, they are something of a treat. You don’t need much though.

This is a good place to start with Chia:

Chia Breakfast pudding

2-3 tablespoons Chia seeds

About 300ml almond milk

1 tbsp Almond butter

I banana, sliced

1 tbsp raisins

1 tbs flaked almonds

Method:

Soak the seeds overnight in the almond milk (give it a stir when you pas the fridge as they can ‘clump’)

In the morning, arrange you banana, nut butter, raisins and nuts attractively on top of the pud

Mix and smash it all up or eat it delicately -it’s up to you.

Feel energised, full, trendy and smug til lunch time.
