Chocolate Berry Cups
A not-too sweet, but deliciousy indulgent after dinner treat when you want a pud that contains ingredients that are good for you…
Hey, dark chocolate and berries are ‘superfoods’ aren’t they??
Anyway this does have no added sugar, is easy to whip up, and full of goodness no matter what your eating goals are.
100 g dark chocolate
150 ml of cream OR creme fraiche if you want a lower-fat option
200 g of frozen mixed berries
Heat the cream or creme fraiche gently in a saucepan, but DON’T boil. It just need to be warm enigh to melt the chocolate.
Remove from the heat and stir in the chopped chocolate. Keep stirring until it’s all melted (though don’t worry if it doesnt, a few chocolatey chunks won’t matter)
It should be evenly coloured, though
Next, stir in the mixed berries, reserving a handful to go on top.
Pour the choc-cream mixture into ramekins or teacups, or any small-ish receptacle you have four of, and leave to set in the fridge.
To serve, pop a few berries on top, sprinkle with icing sugar if you need to make it look fancy, and enjoy.
