As part of my experimental Paleo week, I was keen to get a replacement for forbidden peanut butter. Cashew and Almond butter is expensive to buy, so I decided to bulk buy some nuts, and have a go at making my own.
It is RIDICULOUSLY easy…
300g whole almonds
2 tbsp Coconut Oil
Roast the nuts at 200 degrees for 10 mins
Put them in the food processor and whizz. Add 1-2 tbsp of coconut oil and continue to whizz until you have a smooth butter.
Totally delicious, and makes a great (*Paleo) snack with some sliced apple…
