Stone Age Omelette

 

A Paleo recipe for a high fat, low carb lunch:

Tbsp olive oil

2 eggs, whisked

handful tomatoes, chopped

handful herbs, chopped. I used coriander, parsley, chives

1/2 an avocado chopped

Heat the oil in a small frying pan, and fry the egg for 2 minutes

Tip in the veg and herbs, fold over if you can, (I left mine open) and cook for a further minute
