Feta crusted fish with Roasted Vine Tomatoes

A super-easy and quick recipe for delicious Friday night fish…


Palm sized piece of white fish eg haddock, cod etc

1 slice of bread crumbled into breadcrumbs, or whizzed to bits in a food processor

about 50g feta cheese, crumbled

A few roasted peppers from a jar

A stalk of cherry vine tomatoes


Preheat the oven to 200 degrees.

Lay the fish on a baking tray and season

In a bowl, mix together the breadcrumbs, feta cheese, and the finely chopped peppers and Mix together, then stir in a tablespoonful of oil from the pepper jar.

Press the crumby topping onto the fish squishing and scooching it to stay in place

Bake in the preheated oven for about 10 minutes, or until the fish is cooked through. Pop a few cherry tomatoes on the tray at the same time as the fish, drizzle with a little pepper oil, and serve alongside the fish when it’s done. Leave them on the stalk to look pretty.

Serve with green beans and butter bean mash. Yummy.
