Carrot Cake Balls
These little raw treats were great for the kids to make at #JuniorTriCamp. We made these for coach and team challenge judge Jimmy Kershaw as carrot cake is his favourite bike treat.
These no-bake tasty little nuggets that can go in a bike bag for a long bike ride, or just in the fridge for a quick pick-me-up when needed.
Guilt-free ingredients as there is no added sugar in these surprisingly sweet treats, just dried fruit and carrots provide the hit you need.
1 cup of oats
1/2 cup of raisins
3/4 cup grated carrot
1/4 cup of water
Chuck all the ingredients except the water in a food processor and whizz. Drizzle in the water until the mixture starts to come together. Roll into bite-sized balls and refrigerate for a couple of hours, or freeze for next time you go out on a bike ride. The frozen balls will defrost as you ride ready for when you need them.
TIp: I rolled mine in ground almonds to make them look prettier, the kids added various decoration-oats, nuts, raisins to make them as pretty as they were delicious 🙂
