Grain fridge salad:

If you are being careful what you eat, and you are a busy person, it really helps your resolve to have some quick and easy meals that you can make in bulk, and have ready and waiting when you need a healthy meal over a few days. This wholegrain gem was found on the bbc good food website- a great resource for new recipes and ideas- and made it onto a few WholeHealther’s meal plans this week!

“This is absolutely my dish of the week! Looking at the recipe it seems like a lot of ingredients to prepare, but in reality it’s all ready in ten minutes – with enough to make two or three meals in the week. The pouches of pulses and grains are brilliant – I found mine at a local supermarket. My magic find was a jar of sesame paste in lidl – perfect for this recipe and many more! Mixing up the dressing, it smells absolutely divine – I’m not sure I want to put this in the fridge and wait until tomorrow! The sweetness of the honey with the tang of lemon, and the mix of cheese and pomegranate in the salad itself means it’s probably something the kids will eat too.

A great find Cat, and one that will make a regular appearance on my weekly menus as a salad on it’s own, and to accompany other dishes. Thank you!”
