Not everything about my Paleo week was bad. It was nice to add some variety to my diet, and also to try some new breakfast recipes that didn’t rely on oats! However this Granola is still best on top of thick creamy Greek yoghurt. Add some fresh fruit too, if you like and you are set up for the day.
2 large tbsps coconut oil
3 tbsps honey
tsp vanilla essence
The amount of nuts and seeds can vary according to your taste. I used:
Cup of almonds
half a cup of pumpkin seeds
half a cup of sunflower seeds
cup of mixed chopped nuts
cup of mixed dried fruit (choose any you like-apricots or dates would be nice, or you could just use raisins)
Heat the oven to 150 degrees
Warm the oil, honey and essence in a saucepan
Pulse the nuts and seeds in a food processor so they are in chunky lumps
Stir into the honey oil mixture
Spread the mix on baking paper on a baking tray and cook in the oven for 20-25 minutes
Stir occasionally but keep it in a layer so that it sticks together
Take out of the oven and stir in the raisins or dried fruit. Cool for about 30 minutes, then break it into rough clumps.
For goodness sake get it in an airtight jar or tub fast or you won’t have any left by breakfast time. Beware-extremely addictive!
