Quinoa, Lentil and Feta salad

Quinoa is a great grain to use in cooking. It’s a versatile, low fat and protein rich grain, so it’s a really good addition to your diet, and a great way to replace the usual starchy carbs in your meals.

Here’s how I used it for lunch today:

Quinoa, lentil and feta salad

75g Quinoa

half a tin of green lentils

4 spring onions, chopped.

1/8 cucumber, diced

50g feta cheese

zest and juice of a lime

tbsp olive oil

Boil the quinoa in double the amount of water until the grains have ‘uncurled’ and absorbed the water. Rinse with cold water and drain.

Stir in all the other ingredients, and crumble the cheese on top.

Easy peasy, totally yummy. And good for you.
