Here’s an easy way to transport your WholeHealth lunch to work on a hot day…
It’s all about layers. Just layer up your salad ingredients of choice into a jar, and stick it in the fridge. When it comes to lunchtime, simply tip the jar onto a plate, et voila, as they say on the continent.
Here’s the way to layer it:
First-dressing. Pour your dressing of choice made from olive oil, mustard, vinegar or lemon juice into the bottom of the jar.
Next: Protein. Choose a lean protein source. Or in tastier sounding language; cooked chicken, flaked fish ie tuna, salmon mackerel or if you’re veggie, try chickpeas, beans or feta cheese.
Then: Any salad veg you want-peppers, tomatoes, onion, radish, cucumber-the possibilities are endless!
Finally: Leaves on top. Dark green leaves are best-like rocket, spinach, watercress.
