WholeHealth Back-at-the-Ranch Eggs

When WholeHealth gets back from a bike ride, we like something quick and easy but super-nutritious for our recovery food. The post-ride meal is VITAL to get right. There are several requirements: It’s got to be delicious, it’s got to have all those important recovery nutrients, it’s got to contain some of our favourite ingredients  AND it’s got to be FAST.

This recipe fits the bill perfectly. Eggs for perfectly-portioned recovery protein, veg for anti-inflammatory antioxidants, and avocado for healthy fats, all on top of a wrap for a non-stodgy but satisfying dose of quick-access carbs. All in about 15 mins. I know that can seem like a lifetime if you’re the HANGRY type, so have your veg chopped, or even make your salsa before you go out, and why not have have a berry smoothie to rehydrate while you are waiting.

This recipe serves two hungry cyclists for those of us who travel in pairs, but is easily halved if you run your Ranch solo. Try it after your next ride. And let me know what you think in the comments!

IMG_3452For the salsa:

1 red pepper and one yellow, chopped

tsp of chilli powder or to taste

2 tbsp plain flour

1 tin of chopped tomatoes

200ml water

4 eggs

To serve:

2 flour tortilla wraps

2 handfuls spinach

1 avocado, chopped


Heat a tbsp of olive oil in a pan and fry the chopped peppers until softened and starting to brown.

Stir in the chilli powder and flour to coat the veg

Tip in the tin of tomatoes, and rinse out with the 200ml of water and add to the pan. Bring to a simmer, and make dents in the salsa to crack in the eggs.

Simmer until the egg whites are opaque and cooked, or finish off under the grill to completely cook the eggs.

Pile the spinach on top of each wrap on a plate, and then spoon the eggs with the salsa on top.

Scatter the chopped avocado over the top of each wrap. A squeeze of lime and a few coriander leaves is tasty but not essential, and a dash of tabasco makes it fiery.
